
Between hosting family, traveling and just everyday life this summer was incredibly busy and just seemed to fly by. Anytime life gets busy my website takes a bit of a back seat but it always feels so good to come back here when the dust settles. Creating recipes and connecting with you truly brings me so much joy. These oatmeal bars came about on a week where the farmers market was plentiful in strawberries and bananas and I needed quick healthy snacks for myself, and my toddler. They come together so quickly, are family friendly and come out so soft and chewy but still hold their shape. The bananas are mashed in for natural sweetness and texture and the strawberries are warmed with butter and drizzled over the top before baking. The flavor combo stands the test of time and works so well with these bars for the perfect healthy bite!

You can refrigerate the bars for a few days up to a week in an airtight container or freeze for a few months.
With no sugar or sodium added these make a great option for baby or toddler snacks so long as you are comfortable with the texture for your child’s eating skills.

Strawberry Banana Oatmeal Bars
Ingredients
- 3 Ripe Bananas
- 1 Heaping Handful Strawberries
- 1 tbsp Butter (unsalted)
- 1 1/2 cups Oats
- 1/2 cup Milk of choice. I used whole.
- 1 tsp Cinnamon
- 1 tsp Vanilla Extract
- 2 tbsp Almond Butter
Instructions
- Preheat oven to 350F (170C) convection.
- Dice/slice strawberries into about cm wide pieces or smaller and add to a small sauce pan with 1 tbsp butter over medium heat, stirring occassionally. Cook until strawberry pieces are complete softened and the juice and butter have combined into a pink glaze.1 Heaping Handful Strawberries, 1 tbsp Butter (unsalted)
- While strawberries cook get out a medium sized mixing bowl and mash the bananas in the bowl until pretty smooth.3 Ripe Bananas
- Add in rest of ingredients to the mixing bowl and stir until evenly combined.1 1/2 cups Oats, 1/2 cup Milk of choice., 1 tsp Cinnamon, 1 tsp Vanilla Extract, 2 tbsp Almond Butter
- Line an 9×9" pan with parchment paper and spread mix evenly into pan. Drizzle strawberry sauce over the top and swirl around to evenly coat.
- Bake for 15-20 minutes until edges start to slightly brown and middle seems set. Let cool for about 30 minutes and then gently slide parchment paper out onto a cutting board and slice bars. Allow to cool completely before transferring to another container (or refrigerate flat to cool if you have space in the fridge).
