Garlic & Greens Pizza

Friday night pizza and movie night has become a bit of a household tradition for us and I am really soaking it up. My daughter is not even two and when we tell her it’s Friday she yells “PIZZA” because she remembers how fun it is the previous week and I just can’t say no to that. It’s precious. And I love pizza. I absolutely love cooking for my family and exposing my daughter to all different cuisines and tastes so when it comes to pizza night I’ve been trying to switch it up a bit each week. Last week was spinach & artichoke pizza which was also delicious and this week we went garlic & lemon-y arugula salad.

There are a few ways to personalize in the recipe notes and other than that I like to keep things really short and simple around here as I know you came for the recipe, so let’s get to it!

Garlic & Greens Pizza

Pizza with a garlic & mozzarella base topped with parmesan & lemon arugula.

Equipment

  • Pizza Stone (preferable but not necessary)

Ingredients
  

  • 1 12 inch pizza crust
  • 2 tbsp olive oil (divided)
  • 6 cloves garlic, minced
  • 1 tsp oregano
  • 1 large fresh mozzrella ball
  • 3-4 slices prosciutto (optional)
  • 2 heaping handfulls arugula
  • 1 tsp+ fresh lemon juice
  • 1/4 cup grated parmesan
  • salt & pepper

Instructions
 

  • Preheat oven according to crust/dough instructions. If you are using a pizza stone, let it preheat in the oven.
  • Brush half of the olive oil over the rolled out crust, add more if you want.
  • Sprinkle on the minced garlic, oregano + a pinch of sea salt.
  • Rip up mozzarella ball and spread it around the pizza, do the same with the prosciutto if you are adding it.
  • Bake in the oven according to dough/crust instructions.
  • While the pizza is baking toss arugular with the rest of the olive oil, a little fresh squeezed lemon juice, grated parmesan + salt & pepper.
  • Remove pizza from oven and top with arugula salad. ENJOY!

Notes

  1. This is really easy to customize, you can adjust the amount of garlic to your taste, decide if you want prosciutto, another meat, or to make it vegetarian, you can skip the lemon in the dressing if you don’t love the idea of lemon with pizza and you can also cut back on the oil if you prefer lower calories, just know it will be a bit drier! 
  2. I used a store bought ball of pizza dough and the cook time was about 15 minutes. Just make sure you follow the instructions of whatever dough you are using and keep an eye on it.
