Method
- Preheat oven to 350F (170C) convection.
- Dice/slice strawberries into about cm wide pieces or smaller and add to a small sauce pan with 1 tbsp butter over medium heat, stirring occassionally. Cook until strawberry pieces are complete softened and the juice and butter have combined into a pink glaze.1 Heaping Handful Strawberries, 1 tbsp Butter (unsalted)
- While strawberries cook get out a medium sized mixing bowl and mash the bananas in the bowl until pretty smooth.3 Ripe Bananas
- Add in rest of ingredients to the mixing bowl and stir until evenly combined.1 1/2 cups Oats, 1/2 cup Milk of choice., 1 tsp Cinnamon, 1 tsp Vanilla Extract, 2 tbsp Almond Butter
- Line an 9x9" pan with parchment paper and spread mix evenly into pan. Drizzle strawberry sauce over the top and swirl around to evenly coat.
- Bake for 15-20 minutes until edges start to slightly brown and middle seems set. Let cool for about 30 minutes and then gently slide parchment paper out onto a cutting board and slice bars. Allow to cool completely before transferring to another container (or refrigerate flat to cool if you have space in the fridge).
